Our fourth vintage of the Chambourcin rosé is our driest yet. Any evolutions we’ve made in style with this wine can be followed back to adjustments in our picking decisions, as we are seeing more and more than keeping this wine light and fresh helps balance the back end acidity and lift overall aromatics. Whereas in the past we have blended in small percentages of other grapes, the 2015 is 100% Chambourcin, and it is a strong showing of the variety.
Sunset Rosé pairs well with salmon, sushi, mediterranean tapas, charcuterie, salads, and cold vegetables. Enjoy!
