Corry's Notes - Our classic Chardonnay leans more towards a bright, more acid-driven style. We aim to create a wine that is balanced, hence the 50/50 split of stainless steel and neutral oak. The stainless portion provides brighter aromatics, while the neutral oak gives more depth and texture. We age the oak portion on lees, which gets stirred once every two weeks. The goal is to balance the two vessels’ approach to creating an interesting, approachable Chardonnay.
